About the Shishito Pepper
Shishito is a Capsicum annuum variety traditionally used in Japanese cuisine. Plants typically grow up to 3 feet tall and produce an abundance of 3–4 inch long, thin-walled peppers with wrinkled skin and an elongated shape. Peppers are usually harvested green but can ripen to red with slightly sweeter flavor.
Most shishito peppers are mild, but occasionally one will deliver an unexpected burst of heat, often described as a “pepper roulette” experience, where only about 1 in 10–20 peppers is noticeably spicy.
